This session will begin with a presentation by 4 panelists each speaking on these topics:
1. Most maintenance in our restaurant is typically an emergency, no air, no oven, no refrigeration and of course no coffee maker. Can the cosmetic service requests be bundled and if so which ones? How important are brand standards and how are they kept consistent throughout the enterprise?
2. Which tasks/trades can be completed by in-house personnel?
3. How much do handyman services cost? How do you source these services and how do you handle the quality control? Hourly vs. bid by project work, how and when to utilize each?
4. How do we use technology to assist with these processes?

Technology providers profess that their technology solution is exactly what you need (no matter what your need or even if you are not sure what you need!) and their capacity to assist you in managing your vendors and/or technicians is out of this world (many times their correct and you find out later that they were way out!).
This session will help you organize your thoughts as to what level of skill, knowledge, control, staff and in-house budget you have at present, where do you want in the future, how do you match your current and future needs with a technology provider, what companies have what characteristics, how do you use an RFI (Request for Information) in separating the wheat from the chaff, how to use the RFP to customize your solution and determine the great from the good and then what should you expect during implementation.

Preventive Maintenance, The smart, economic, efficient way to keep kitchen equipment working right. Theres nothing new about the idea of preventive maintenance. In fact, for a number of reasons its smart practice to take care of major investments from your car, for example, to your home. And its certainly good business practice to pay a little money now and then to ensure that an important piece of equipment (and one that would be expensive to replace) remains in good working condition. Its that whole ounce of prevention is worth a pound of cure thing.
