Demand-controlled ventilation for your commercial kitchen exhaust system is often a great idea, but there are many instances where the retrofit of a DCV system is challenged by the return on investment. This is particularly the case for low-flow proximity-style exhaust hoods, when the cookline includes high-heat producing appliances such as charboilers, when the existing exhaust system is not working as designed or where there are multiple hoods on one exhaust fan. Card fee 'settlement' just start of big legal battle

Visa, Mastercard and a group of retailers plan to ask a judge to approve a landmark settlement of a lawsuit over credit-card fees, setting the stage for a battle with Wal-Mart and hundreds of other merchants who say it is a bad deal. The $7.2 billion settlement is intended to resolve seven years of antitrust litigation between merchants and credit-card companies and their banks over so-called "swipe fees" that retailers pay to process credit-card transactions. The largest Applebee's franchisee, Apple American Group, is acquiring an additional 99 locations of the casual-dining chain from a Poland-based franchise group, AmRest Holdings, for a total of $94.8 million. The companies recently closed a deal on 97 of the restaurants for $91.6 million. As a result of the deal, Apple American could become the nation's largest franchise operator with a unit count of 436 Applebee's restaurants and annual sales projected to top $1.1 billion. More
